Feel the love :0)

Hey lady! Still no email link!! So I’ll leave you with a recipe of a black bean stew I made last night This was a big pot of stew to enjoy for a few days. improvise however you like and I hope you enjoy this simple stew!!!

Equivalent of 3 tins of black beans (maybe 4? I bought then soaked beans)
1 medium onion
I stalk of green onion (with bulb)
6-8 large cloves of garlic
1 large tomato
2.5 tbs tomato puree
I veggie bruillon
I can of coconut milk
1 tsp ground smoked chipotle pepper
Half a bunch of cilantro
2 - 3 tbs saffola oil (canola or another veggie oil is good too)

in a food processor combine all the onions and garlic and finely chop. Add onion mix to a large pan and sauté till the aroma in your kitchen is lively…hehe! like 3 min on medium

Mix in the bruillon and tomato paste, and then add the tomato. Stir then cover in low medium heat for about 3 min. Now add in the chili powder and coconut milk and let that simmer another 10 minutes.

Add in black beans and water (to the consistency that you would like your stew to be) and stir.
Heres where I did something new as I was feeling inspired. I kept the cilantro in its bunch washed it that way and then stuck the whole (well, half) bunch into the stew with stalks sticking up. This fragrant bunch now replaced the wooden spoon I had been using.

Cover, turn to low heat and simmer about 10 min, occasionally stirring with your cilantro stalk. Remove the bunch and serve

YUMMY!!

I served this with quinoa that had previously been soaked … sauté garlic(3-4 cloves) with small chopped red bell pepper. Add in the 1 cup quinoa and sautéed for about 5 min. Then addwater and salt to taste and let that cook for about 15 min. fluff and serve ;0)

roots power!

You mentioned many of my favorite roots artists!!! there is such a pure meditative peaceful vibe that fills the air when the old roots and dubs are playing...my list changes alot too but we pretty have the same staples;0) i love that... Otherwise im feeling good today, real inspired :0) my trinity just moved into a new space and there is alot of renewal going on. Alot of this is driven by my interactions on YMIB with sisters like you so I thank you for being a part of my process. i'll email you the recipes that I compiled...let me know how it works out!

peace until...
