One of my favorite recipes. ENJOY!!!!

INGREDIENTS:
filet of salmon
lemon or lime juice (1/3 cup)
butter or margerine (tea spoon)
minced garlic (1 tbsp or more)
aluminum foil
seasoning salt/cajun seasoning, or just black pepper depending on your taste buds

STEPS:
Heat oven to 350 degrees
1. Rinse off salmon
2. Put a piece of aluminum foil (needs to be large enough to fold ends together and create pocket around the fish) in a baking pan/dish
3. place filet in the middle of foil and pull sides up so next ingredients will not escape
4. pour lemon or lime juice over fish
5. season to taste (I like cajun) add some rosemary or a basil leaf if you have it
6. sprinkle minced garlic
7. place butter in middle of filet
8. fold the longer sides of foil in so the edges meet and roll down edges, then fold in the short ends so no air will escape
9. bake for about 40 min
10. carefully open foil pouch being careful not to get burned by steam, check for doneness in the thickest part of filet, cook a little longerif it is not done
11. after baked through, set oven to broil, put back in the oven until top is lightly brown (check often and do not leave unattended on the broil setting or you will burn the fish)

**variation: add some soy or teriyaki sauce for an asain flair. Or use the duck sauce from your last take out Chinese food meal for a sweet change :-)
