Calling all mommies...what do you all prepare or pack your kids for lunch? I am doing good with breakfast and dinner, but lunch is getting a bit redundant, but with that said, could you all share some of your recipe hits with the kids that you fix for dinner too? I need new ideas!
Peanut Butter Apple Wrap
The night before, I dice an apple, and add it to a small pot sitting on medium-high heat, with a small amount of apple juice, and cinnamon, and put a lid over it until it softens just a bit. Meanwhile, I take a flaxseed or whole grain tortilla, and on one side, spread peanut butter, drizzle honey, and sprinkle a little bit of granola (if I have any) on it. Then, I take my semi-softened apples, and place them on the tortilla, and wrap it all up.
I usually cut this apple wrap in half because it's waaaaay too big for my daughter, so I end up putting one half in her lunch, and save the other half for me! It tastes soooo good, and I love the fact that she's getting, (we'll, we're getting, lol) much needed fiber, as well as some protein from the peanut butter.

Last year my son took a home lunch to school everyday so I was faced with the task of making a healthy lunch interesting enough for him to eat it all while I was not there to monitor him. I've found that finger foods fair the best. I wanted to make sure he ate mostly hot lunches so I invested in a thermos. I was able to send him to school with left overs and other hot soups most days. He has even eaten oatmeal for lunch. That was per his request, lol. My son enjoys that corn soup recipe you posted a while back. I just heat the food in the morning and it stays hot/warm by lunch time.
he also enjoyed taking taco salads to school. I would just separate the tortilla chips from the toppings so they stay crispy. I hold on to sauce packets from fast food places and they go in his lunch bag easy.
He loves lunchables so I would buy the jr. lunchables that just have the crackers, cheese and meat then add fresh fruit and juice from home.
he also enjoys burritos. so i pack those for him and the school will heat up the food for him. you can make your own burritos the night before or buy the pre made ones. my lil one loves to dip his food so I try to incorporate that aspect into most of his lunches.
Chef boy r dee makes meatless spagetti-o's so those are an option as well.
one other thing my son loves is apples and peanut butter.
Most of his lunches are easy and quick for me to make in the morning. That is key for me because I go to work each morning and don't want to cram too much into those waking hours. Every lunch has to have fruit and/or veggies. He's not much of a meat eater so I don't worry too much about that and Imake up for protien by including beans and other sources. And if all else fails with lunch, he'll make up for it once he gets home.

Quick and Easy Lunch/Dinner Ideas

As a home educating mother of two, we are always out and about so we usually have a packed lunch. Wraps are a lunch staple and makes an easy dinner too.
Sometimes we go Mexican and make fajitas, chimichangas, or burritos with meat and vegan options: accompanied with bowls of salad vegetables, lettuce, tomatoes,grated cheese, olives, sour cream and salsa.
You can fill wraps with just about anything; Choose from plain flour, wholewheat/white, or mediterranean herb tortillas. Some of our favourite fillings are:
Grated cheese and carrots with mixed salad leaves with a drizzle of homemade dressing;
Houmous with baby spinach leaves, watercress, and a mild chilli salsa
Chicken Bites with mixed salad leaves , cherry tomatoes and dressing.
Tuna with sweetcorn or chopped red peppers, cucumber, mixed salad sleeves, mayonnaise
Piita bread can also be used with these fillings for a bit of variety.
We also love sushi. Sometimes we buy it from a good sushi bar or supermarket but it is great fun to make at home for lunch or dinner. We also use non traditional ingredients like fish fingers and sausages, as well as traditional fillings such vegetables, tuna, salmon, prawns, crab, smoked fish, etc. We roll some in nori (roasted seaweed sheets ) and cut them into small pieces or we use cookie cutters to cut interesting shapes from the vinegared sushi rice with the filling on top. We also wrap the ingredients in squares of nori, into a cone and eat it like that.
