Okay this may sound a little weird, but I promise you all that it is so delicious! This chick pea roast is the perfect meat alternative and makes a great meatloaf replacement and also makes a very good veggie/bean burger, by just shaping the mixture into patties instead of putting it in a loaf pan. The original recipe calls for lentils. I have used both, but I think I like using chick peas the best. You should try this at least once. It goes great with some mashed potatoes or like I said as a burger! Enjoy!
Ingredients
1 1/4 C. Cooked Chick Peas
2 Vegetable or Chicken Buillon Cubes Crushed
2 C. Grated Mozerella & Shredded Cheese
1/2 C. Onion, Finely Chopped
2 C. Fresh Portobello Mushrooms, Chopped
1 1/2 C. Fresh Whole Wheat Bread Crumbs
2 tbsp. Chopped Parsley
1 tbsp. Lemon Juice
2 Eggs, Lightly beaten
Salt, Pepper, Paprika & Garlic Powder to taste
Directions Lightly spray your loaf pan with non-stick vegetable or canola spray & pre-heat your oven to 350 degrees. Mix all of your ingredients together. Pour into your loaf pan or shape into patties if you will be making burgers.
Bake for about 45 minutes to one hour OR until golden brown and firm(you will especially want to check the center if using a loaf pan). Let cool a bit and then gently use a spatula to turn onto your serving dish. I recently served ours with a fresh salad and fruit, but you could also serve this a s a meatloaf alternative by making a seasoned tomato sauce to drizzle on top...YUM Our little one likes his with ketchup.
